Mango Burfi (Mango Fudge)

One of my blog reader, Buvana, asked me to share a sweet recipe with mango pulp. I had some mangoes at home as hubby usually gets mangoes in bulk as mangoes always hold a special place in my heart. Hence, I decided to make this delicious burfi on an impluse yesterday night. Hubby dear loved it a lot and complimented me that this mango burfi was better than the store-bought ones. It is easy and quick to make too. This delectable mango flavored Indian sweet is definitely worth trying.

Ingredients:-
  • 200 grams whole dry milk / khoya (crumbled)
  • 2 big mangoes (cut into cubes and made to puree)
  • 1 cup condensed milk
  • 1 cup desiccated coconut
  • ¼ cup almonds (sliced)
  • 2 tbsp clarified butter / ghee 
  • 1 tbsp semolina (roasted) 
  • 1 tbsp sugar
  • ½ tsp cardamom powder

Method:-
  • Heat ghee in a heavy bottomed pan.
  • Add semolina and saute for a minute. 
  • Add desiccated coconut and saute again for a minute.
  • Add khoya and mix well.
  • After 2 minutes of continuous stirring, add mango pulp and mix well.
  • Add condensed milk, sugar and cardamom powder. Mix again.
  • Cook till the mixture becomes thick and leaves the sides of the pan.
  • Grease a plate and spread the mixture on it.
  • Sprinkle almonds and gently press so that the almonds stick to the burfi.
  • When the mixture cools down, cut into squares and store in an airtight tin.
Notes:-
  • The entire procedure of making the burfi should be done on a slow flame. 
  • The sweetness of the burfi fully depends on the sweetness of the fruit. Hence taste the mango pulp and adjust the sweetness as per required.
  • You may avoid condensed milk and add only sugar instead.

Orange-Mango Custard Delight

Everyone in my family loves mangoes. Every week there is at least one mango recipe in my kitchen. After much thinking, I tried to incorporate mangoes in the usual custard with a slight twist. This simple yet delightful custard with the goodness of chopped mango pieces and tanginess of orange juice was pure bliss. It was an instant hit at home. Kids will definitely love it and it is healthy too for them.

Ingredients:-
  • 5 cups milk
  • 1 cup fresh cream
  • ½ cup orange juice
  • ½ cup sugar
  • 3 tbsp vanilla custard powder
  • 3 tbsp roasted vermicelli
  • 2 mangoes (peeled and chopped)
Method:-
  • Mix custard powder with ½ cup milk. Make into a smooth paste. Keep aside.
  • Boil the remaining milk.
  • When milk starts boiling add sugar.
  • Cook on slow flame for approx. 2 to 3 minutes.
  • Gradually add the custard paste stirring well.
  • Cook for another 2 minutes on slow flame stirring continuously.
  • Switch of the flame and let it cool.
  • Meanwhile boil vermicelli in water till done.
  • Drain and keep aside.
  • When custard is cool, add fresh cream.
  • Mix well and add boiled vermicelli and orange juice.
  • Serve garnished with chopped mangoes.
Notes:-
  • You may avoid adding orange juice and add finely chopped orange jelly instead when the custard is cool.
  • Instead of mangoes, you may use litchi (deseeded and cubed).
  • You may use starwberries, but add starwberry custard powder instead.
  • You may use canned pineapples and add syrup instead of juice to the custard.

Strawberry Slush

I love strawberries. Strawberries are full of vitamin C, and also a good source of folic acid, iron, potassium and magnesium. They are also one of  the highly concentrated antioxidant fruits which helps fight cancer and strengthen our immune system. Today, I made this simple yet amazing and refreshing strawberry slush. Slushes are drinks which have lots of ice in it. This drink is fresh, healthy, and perfect for a hot summer day.  

Ingredients:-
  • 1 cup strawberries
  • 1½ cup crushed ice
  • 3 tbsp sugar
  • ½ cup sprite
  • a pinch of salt
Method:-
  • Remove the green petals and pull the stalks of the strawberry. Wash them well.
  • Blend the strawberries along with all the other ingredients.
  • Serve chilled.
Notes:-
  • You may also use blueberries, watermelon or kiwi instead of strawberries to make slush.
  • You may also use frozen strawberries instead of fresh ones.
  • You may add honey instead of sugar.

Hawaiin Fruit Punch

Usually at this time of summer, the temperature is 32 degrees Celcius here and  most of these times I make a lot of chilled drinks to keep myself well hydrated. I love fruit punch. It is a very refreshing and appetizing drink. 

Ingredients:-
  • 10-12 strawberries
  • 1 cup chopped pineapple pieces
  • 1 banana finely chopped
  • 1 cup pineapple syrup
  • ½ cup soda
  • ½ cup condensed milk
  • 3 tbsp sugar
  • 4 tbsp vanilla ice cream
  • 1 cup ice cubes 
Method:-
  • In a blender  combine all the ingredients. 
  • Blend it well till smooth.
  • Pour into glasses and serve.
Notes:- 
  • You may use any white drink (7 up, sprite, mountain dew, etc) instead of soda.
  • Add canned pineapple and not the fresh one.
  • If fresh strawberries are not available, you can add frozen or canned.

Orange Banana Smoothie

I love smoothies for breakfast. They are quick and easy to make. Today I used the combination of oranges and banana this morning. It turned out to be wonderful. pretty yummy and refreshing. Simply delicious. This smoothie is full of Vitamins and minerals.

Ingredients:-
  • 5 scoops vanilla ice cream
  • 1 tbsp honey
  • 3 bananas (chopped)
  • 2 cups milk
  • ½ cup orange juice
  • crushed ice
Method :-
  • In a blender  combine vanilla ice cream, honey, bananas, milk and ice. Blend it well.
  • Add orange juice and blend again till smooth.
  • Pour into glasses and serve
Notes:- 
  • You may substitute the fruits as per your liking and change the ice cream flavour that complements it well. For ex. If you use strawberries, then take strawberry ice cream.
  • You may avoid crushed ice and use chilled milk instead.
  • You may add 2 tbsp sugar powder instead of honey.
  •  You may also add more orange juice for a nice tangy flavour and peachy colour.
