Sheer khurma is a most popular traditional sweet dish prepared by
Muslims on the auspicious festival of Eid especially in South Asian countries. 'Sheer’ is the Persian word for milk
and ‘khurma’ is the Persian word for dates. Hence it’s called ‘Sheer khurma’. This royal and nutritious treat is made with fine vermicelli, lots of dry fruits, cardamom and dry
dates added to milk. It is served breakfast on Eid soon after the Eid prayer is done, and all
over the day to welcome the guests. Everyone has their individual method of
making sheer khurma. I have shared the recipe that my Mom has taught me. This
recipe is a sure hit and loved by many. It’s
been my all-time favorite since I was a kid. It is delicious and very easy
to make as well..
Ingredients:-
- 1½ litre milk
- ½ cup sugar
- 1 tbsp dry dates powder (kharik)
- 1 tbsp blanched charoli seeds
- handful of fine vermicelli (roasted)
- handful of blanched and sliced dry fruits (cashew, almonds & pistachios)
- a pinch of cardamom powder
Method:-
- Heat milk till it comes to a boil.
- Simmer flame and add vermicelli crushing it well with your hands.
- Add cardamom powder and dry dates powder and keep stirring on slow flame all the time.
- Add dry fruits. Cook on slow fire for 15 minutes.
- Switch off flame and add sugar. Mix well.
- Garnish with more blanched and sliced dry fruits.
Notes:-
- You may add more vermicelli if you feel that it is very less. I usually add a bit more after checking the consistency when adding dry dates powder.
- My Mom usually gives a tempering to the sheer khurma when cool. I don't do that but you may temper your sheer khurma if you wish..
- For tempering :- Heat 1 tbsp clarified butter (ghee) in a saucepan, add a pinch of cardamom powder and few raisins. Pour over the sheer khurma.

DeleteRecipe looks like a winner! I just tried out something similar called Rabdi with saffron strands, almonds and pistachios. Boiling the milk down is a pain!
