Vegetable Frankie

There are so many foods I miss from Mumbai and among them is yet again my favorite Frankie. Frankie is an Indian version of a wrap (roti) smeared with beaten egg and roasted and made into a roll with different types of fillings. It is quite simple to make and you can also use leftover vegetables as stuffing. Ideal for breakfast, evening snacks or Sunday brunches. Kids definitely love this healthy meal even though they crib to eat chapati's and vegetables. This is a must try recipe for all Moms of school-going kids for their lunch-box.

Ingredients for wraps:-
  • 1½ cups flour (maida)
  • 1 tsp oil
  • salt to taste
  • water to knead dough
Method:-
  • Knead the dough as for chapati's.
  • Heat a pan and semi-cook the chapati's. Keep aside.
For the filling:-
  • 200 gms cabbage (shredded)
  • 1 capsicum (finely sliced)
  • 1 big onion (finely chopped)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • ½ tsp chilli powder
  • ½ tsp all spice powder (garam masala powder)
  • ¼ tsp dry mango powder (amchur powder)
  • ¼ tsp pepper powder 
  • salt to taste
Method:-
  • Heat oil in a wok.
  • Add cumin seeds and onion.
  • Saute till onion is slightly transparent.
  • Add cabbage and capsicum. Saute till tender.
  • Add the remaining dry masala's and mix well.
  • Keep aside.
Ingredients for arrangement:-
  • 1 large onion (finely chopped)
  • 12-15 green chillies (finely chopped)
  • ½ cup vinegar
  • eggs (use one full egg per chapathi)
  • little oil for frying
 Method for arrangement:-
  • Boil green chillies in vinegar and keep aside.
  • Heat a pan, sprinkle little oil and throw in one chapathi.
  • Spread half a beaten egg on it and flip it.
  • Spread balance half egg on the other side and flip again. 
  • Keep the chapathi on a plate.
  • Spread the filling in the centre.
  • Sprinkle chopped onions.
  • Sprinkle little chilli vinegar.
  • Roll into a frankie.
  • Wrap the edges with foil and serve.
Notes:-
  • You may choose filling as per your choice, for eg. paneer or chicken or even leftover sabzi.
  • You may also add grated cheese on the filling before rolling it into a frankie.
  • Instead of  maida, you may also use wheat flour for a healthier version.

  13. Hey Nilu, thanks a bunch for whipping out many of aamchi Mumbai's drool worthy recipes!! At work, we use to have a frankie kiosk, where they make similar frankies and just for 15 to 25 bucks, it tastes heavenly and keeps you full for long! I usually go for egg burji frankie, they also add some green, red chutney and some mirchi water over it to spice up the frankie!!
    You frankie looks yum, fresh and authentic.
    Again thx for sharing, will try this for sure.
    Good idea to roll an aluminum foil at the end!!

  31. I know it's not an egg roll, but it reminds me of them. My Step Grandma, the only Grandma I knew on the one side was from the Philippines. She made the best egg rolls! I miss them so much.
