Poha also known as aval is a traditional Maharashtrian recipe prepared by using flattened rice and potatoes. It is one of my favourite breakfast and often made at home. It is delicious in taste and very easy to make as well. It can be made as an after school snack for kids as it is quite filling.
Ingredients :-

- 1½ cup poha / aval
- 1 onion (finely chopped)
- 1 big potato (finely chopped)
- 2 tsp oil
- 1 - 2 green chillies (finely chopped)
- ½ tsp mustard seeds
- 1 tbsp peanuts (roasted and peeled)
- 1 tsp urad dal
- pinch of turmeric pdr
- 7 - 8 curry leaves
- few coriander leaves (finely chopped)
- salt to taste
- Take poha in a colander and wash well under running water.
- Add to it salt and turmeric pdr and keep aside.
- Heat oil in a pan.
- Add to it mustard seeds, curry leaves, urad dal and peanuts.
- Saute and add onions and green chillies. Mix well.
- Add potatoes and about 2 tbsp water. Mix well and simmer till potatoes are done.
- Mix in poha well. Simmer for just one minute.
- Garnish with coriander leaves and serve.
Notes:-
- You may substitute peanuts with chopped cashew nuts if you wish.
- You may add green peas along with potatoes for a slight sweet taste.
- You may sprinkle little lemon juice while mixing poha to the potatoes.
