Chicken handi is mainly a dish which was cooked in a clay
pot traditionally, but I made it in a wok. It is the most easiest and the best among
chicken recipes. It is very rich and delicious in taste. According to my hubby,
that it is even better than the restaurant preparation.
Ingredients:-
- ½ kg chicken
- 2 onions (ground)
- 2 tomatoes (ground)
- 3 tbsp oil
- 1 tsp red chilli pdr
- 1 tsp coriander pdr
- ½ tsp turmeric pdr
- 1 tsp ginger-garlic paste
- 3 green chillies (finely chopped)
- ¼ cup yoghurt (whisked)
- 1 tbsp almond / cashew pdr
- few coriander leaves (finely chopped)
- salt to taste
Method:-
- Heat oil in a wok and fry onion paste until light brown.
- Add the chicken pieces and stir for 3-4 minutes.
- Add to it, ginger-garlic paste, tomatoes, green chilies, almond pdr and saute well.
- Add red chili pdr, turmeric pdr, coriander pdr, coriander leaves, salt and yoghurt. Cook till oil separates.
- Add water as per required consistency and let it boil.
- Cover and cook on slow fire until chicken is cooked.
- Serve with naan or paratha.
Notes:-
- You may use boneless chicken. If using ½ kg boneless double the quantity of all other ingredients.
- If your gravy consistency is not as per you desired after cooking, add boiled water to the gravy and heat it.
- You may substitute yoghurt for fresh cream if you want a more rich taste.
