Paratha's are usually made for breakfast in my house. I had some grated beetroots in my fridge which I was wondering if I should use them in a salad or for making beetroot rice or simple beet juice. But then I decided to make paratha's; as it is a good way to make my son eat paratha's which he doesn't like. Beetroot paratha's are quite colorful, easy to make and full of nutrition. Beetroot is an excellent form of antioxidant and iron and is also rich in Vitamin B. It is my hubby and son's favorite vegetable. Although I'm not a beetroot person but surely do love these paratha's.
Ingredients:-

- 1 cup wheat flour
- 1 small beetroot (grated)
- 2 green chillies (finely chopped)
- 2 tbsp coriander leaves (finely chopped)
- 2 tsp oil
- salt to taste
- butter / ghee to smear on cooked paratha
Method:-
- Mix all the ingredients above except for butter and knead well to form a dough. (Be careful to add little water at a time and not use too much water otherwise the dough will become too soft as beetroot itself contains enough water.)
- Keep aside covered for 10 - 15 minutes.
- Make small balls of the dough and roll them into paratha's sprinkling some flour in between if the paratha sticks too much while rolling.
- Heat a tawa and fry the paratha's flipping on both sides till cooked.
- Smear with ghee / butter.
- Serve hot with curds or raita of your choice.
- You may add chat masala powder or red chilli pdr while kneading the dough if you prefer a bit more spicy.
- You may add grated carrot and chopped spring onion leaves to make the paratha even more colorful.
- You may also grind chillies and add the paste to the paratha while making for your baby.
