Egg bhurji is quite easy to make, very tasty and full of nourishment. It can be served with plain parathas, chapatis or Mumbai laadi pav. Egg bhurji is nothing but a spicy version of scrambled eggs. It is very commonly found in the streets of Mumbai. In India, it is also served as a quick-fix Sunday brunch. We all have eggs almost everytime in the fridge and who doesn't love eggs.. YES!! We all do. I'm sure that each one of us must be having our unique way of preparing this dish and we all call it by different names. In our house, we call it Khageena.. I love this dish and make it quite often for breakfast.
Ingredients:-
- 2 tbsp butter
- 1/4 tsp cumin seeds
- 2 green chillies (finely chopped)
- 2 onions (finely chopped)
- 1 tomato (finely chopped)
- 1 tbsp coriander leaves (finely chopped)
- a pinch of turmeric pdr.
- salt to taste
Method:-
- Heat butter in a wok. But be careful that it doesn't burn.
- Add cumin seeds and let it splutter for a second.
- Add chopped onions and green chillies and saute till onion becomes transparent and soft.
- Add turmeric pdr. and chopped tomato.
- Stir well and cook on slow flame till the tomatoes are tender.
- Meanwhile, break eggs in a bowl.
- Add salt to the eggs and whisk well.
- Add the beaten eggs to the wok and stir vigorously until mixed well.
- Cook for a minute or maybe two stirring continuously until the eggs leave the sides of the wok.
- Garnish with chopped coriander leaves (and butter if you want).
- Serve hot with chapati, paratha or laadi pav.
- You may add capsicum for more color to the dish.
- You may also add pepper pdr instead of green chillies while making for your baby.
- You may substitute butter for refined oil.
