Gulab ka sheera is the usual semolina pudding / sooji ka halwa / rava kesari with rose flavouring. It is very quick to make and one of the easiest sweets among all the Indian sweets.
Ingredients:-

- 5 cups water
- 3 cups sugar
- 1 cup semolina
- ¾ cup ghee
- ½ tsp cardamom pdr
- ½ tsp rose essence
- few drops of rose colour
- mixed nuts (finely chopped)
- Heat water and sugar in a bowl till sugar dissolves and it comes to a boil.
- Immediately switch off the flame.
- Heat ghee in a pan and add semolina and cardamom pdr.
- Fry for 2 minutes stirring continuously on slow flame.
- Carefully add the sugar syrup.
- Mix well and add colour.
- Cook for 4 minutes stirring continuously.
- Remove from flame and keep aside covered for 15 minutes.
- Garnish with chopped nuts.
- The mixture will be quite runny when you switch off the flame. Don't worry it will reach the correct consistency when kept aside.
- You may substitute the flavourings as per your liking, eg. pineapple essence and yellow colour etc.
- Do not cook the sugar syrup more than a boil.
