Kadhi

Kadhi is basically the mixture of two main ingredients - yogurt and gram flour. It is rich and creamy in consistency. It also has fried dumplings made of gram flour in it. It is very mildly flavored and prepared mostly in summer seasons. As a kid, I never used to like kadhi, but after I got married, I started missing my Mom's taste in foods. So, the first time I visited Mumbai after marriage, I took the opportunity in learning this dish from her and since then I became a lover of Kadhi forever and ever. I don't know what makes this Kadhi so different and special but it tastes amazing.It is quite easy to make with almost all ingredients available easily at home. This kadhi is a perfect combination to steaming hot white rice, but if you ask me I like it with hot chapatis too.

Ingredients:-
  • ¾ cup yogurt
  • 6 cups water
  • 4 tbsp gram flour
  • 1 tsp ginger-garlic paste
  • 1 tsp coriander pdr
  • 1 tsp red chilli pdr
  • ½ tsp turmeric pdr
  • salt to taste
Method:- 
  • Take a big mouthed vessel. 
  • Place a cooking strainer in it and add all the ingredients in the strainer except the water. 
  • Keep adding water gradually and mixing so that a thin sauce like batter is collected in the vessel.  
  • Now, remove the strainer and add salt to the batter.
  • Keep this vessel on high flame stirring continuously till it boils.
  • Simmer for another 20 minutes.
  • Remove and keep aside.
  • Your kadhi is ready.
Ingredients for dumplings:-
  • 1 cup gram flour
  • 1 big onion (ground)
  • a pinch of cooking soda
  • 1½ tsp red chilli pdr
  • 1½ tsp coriander pdr
  • salt to taste  
  • oil for frying
Method:- 
  • Place all ingredients for dumplings in a bowl.
  • Add little water and make a thick batter of dropping consistency.
  • Beat the batter well.
  • Heat oil in a wok.
  • When the oil is hot, add dollops of batter in hot oil.
  • Fry on slow flame till golden brown.
  • Meanwhile, in a bowl, take enough water and add salt to it. Mix well.
  • Drain the dumplings and immediately put in salted water for 2 seconds. 
  • Dip well and gently press each dumpling to remove excess water and put these dumplings in the prepared kadhi. 
Ingredients for tempering:-
  • 1 onion (sliced)
  • 1tsp cumin seeds
  • 1 sprig curry leaves
  • 2 tbsp oil
Method:-
  • Heat oil in a pan.
  • Add onions, cumin seeds and curry leaves.
  • Fry till golden brown.
  • Pour this tempering over kadhi.
  • Serve with hot steaming rice. 
Notes:-
  • You should continuously stir the batter for kadhi until it boils. Or else it may form lumps.
  • If you feel the batter is too thick add a cup of water to it before boiling.
  • You may add finely chopped onions instead of ground onions while making dumplings.
  • Soaking the dumplings in salted water helps it to become moist and soft and also reduces the amount of kadhi the dumpling soaks after adding it to the kadhi.
